ONE - STEP TROPICAL COFFEE CAKE 
1 1/2 c. flour
1 c. sugar
2 tsp. baking powder
1/2 tsp. salt
1 (8 oz.) carton pineapple or plain yogurt
1/2 c. oil
2 eggs

TOPPING:

1 c. coconut
1/3 c. sugar
1 tsp. cinnamon

Heat oven to 350 degrees. Grease 9 inch square pan. In large bowl, combine all cake ingredients; stir 70 to 80 strokes until well blended. Pour into prepared pan. In small bowl, combine all Topping ingredients. Sprinkle over batter. Bake at 350 degrees for 35 to 40 minutes or until toothpick inserted in center comes out clean. 9 servings.
