ZUCCHINI SOUFFLE 
4 c. diced zucchini squash
1 sm. onion, minced
2 tbsp. flour
1/4 tsp. salt
1/4 tsp. pepper
1 c. grated cheese
(1/2 Jack and 1/2 Cheddar)

Precook squash in microwave 2 minutes. Cool for 10 minutes. Combine all ingredients except eggs. Mix well. Add eggs. Mix well. Place in a medium glass casserole. Bake at 325 degrees for 1 hour and 15 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
