ZUCCHINI SQUASH CASSEROLE | |
4-5 sm. zucchini, thinly sliced (2 1/2-3 lb.) 2 med. size onions, thinly sliced 1 pkg. chicken flavor Stove Top stuffing mix 1/2 stick butter 8 oz. pkg. Velveeta cheese Prepare stuffing mix as per package directions, using 1 1/3 cups water instead of 1 3/4 cups. In a 9 x 13 inch baking dish, alternate layers of zucchini and onions with pats of butter until all of the zucchini and onions are used up. Spoon prepared stuffing mix over top. Cover with foil and bake in preheated 350 degree oven for 45 minutes or until zucchini is tender. Grate Velveeta cheese and sprinkle over casserole; put back in oven uncovered until cheese melts. |
