WESTERN RANCH MEAT LOAF | |
10 lbs. ground beef 2 1/2 c. onions, chopped 2 c. green pepper, chopped 1 lg. bunch celery, chopped 1 1/4 c. fat 3 1/2 tbsp. salt 10 med. eggs 3 qts. bread crumbs 2 1/2 c. water 2 1/2 c. tomato sauce 1/4 lb. butter Pan fry onions, green pepper and celery in fat. Combine with salt, eggs, bread crumbs and water to make a stuffing, beat until thoroughly moistened. Add 1/2 of stuffing to meat. Pat out meat mixture in bottom of loaf pans. Top with remaining mixture. Bake in a moderate oven at 350 degrees for 1 1/2 hours. Brush top with mixture of tomato juice, mixed with melted butter to keep loaves moist. Serves 50. |
