RING RANCH CHICKEN 
1 med. onion, chopped
1 med. green pepper, chopped
3 tbsp. butter
2 c. chopped tomatoes
1 can cream of mushroom soup
1 can cream of chicken soup
1/3 c. Pace picante sauce (this is way too much - I use any kind of salsa)
1 tbsp. chili powder
12 corn tortillas, torn up into pieces
2 1/2 to 3 c. cooked chicken
3/4 c. grated cheese

Cook onion and pepper in butter. Remove from heat. Add tomatoes, soups, salsa and chili powder; mix well. Line bottom of 3 quart casserole with half tortilla pieces. Top with half chicken and half vegetable mixture. Repeat layers (I get lazy and just mix it all). Sprinkle with cheese. Bake uncovered at 350 degrees for 35 minutes, let stand for 10 minutes before serving.
