BLACK WALNUT APPLE CAKE 
2 eggs
2 c. sugar
1/2 c. vegetable oil
2 tsp. vanilla extract
2 c. all-purpose flour
2 1/2 tsp. ground cinnamon
2 tsp. baking soda
1 tsp. salt
1/4 tsp. nutmeg
4 c. chopped tart apples, peeled
1 c. chopped black walnuts

Mix eggs, sugar and vanilla; mix well. Combine dry ingredients; add to the egg mixture and mix well. (Batter will be stiff.) Stir in apples and walnuts. Spread into a greased 13 x 9-inch baking pan.

Bake at 350°F for 45 to 50 minutes or until a toothpick inserted in middle near center comes out clean. Cool on wire rack.

Butter Sauce:

3/4 c. sugar
3 tbsp. plain flour
1 c. milk
2 tbsp. butter
1 tsp. vanilla extract
walnut halves (optional)

Combine sugar, flour, milk and butter in a saucepan. Bring to a boil over medium heat; boil and stir for 2 minutes. Remove from heat; stir in vanilla. Cut cake into squares; top with warm sauce. Garnish with walnut halves if desired.

Makes 12-15 servings.
