FRESH APPLE OMELET 
3 tbsp. flour
1/4 tsp. baking powder
Dash salt
2 egg whites
3 tbsp. sugar
3 tbsp. milk
2 egg yolks, beaten
1 tbsp. lemon juice
1 lg. red apple, thinly sliced
1/4 c. sugar
1/4 tsp. cinnamon

1. Preheat oven to 375 degrees. Sift flour with baking powder and salt.

2. In medium bowl beat egg whites until foamy. Gradually beat in 3 tablespoons sugar beating until stiff peaks form.

3. Into flour mixture in small bowl beat milk and egg yolks until smooth. Fold gently into egg whites along with lemon juice, just until combined.

4. Slow heat large buttered skillet (about 10 minutes) with medal handle. Turn batter into skillet. Spread evenly.

5. Arrange apple slices in pattern over top. Sprinkle with 1/4 cup sugar and the cinnamon.
