ZETTA'S MINCEMEAT 
12 c. apples, chopped
1 c. currants
1 1/2 tsp. cloves
3 tsp. cinnamon
2 tsp. allspice
1 1/2 tsp. nutmeg
1/2 tsp. pepper
1 tbsp. salt
1 1/2 c. boiled cider
1 c. butter, tallow or butter
1 qt. maple molasses, dark thick syrup
1 qt. sugar
6 c. ground cooked meat, venison or beef
1 lb. white and 1 lb. seedless raisins

Cook slowly stirring often until apples are tender and all quite thick. Watch that it doesn't stick to bottom of kettle. Taste, it may need more sugar if apples are tart. Add 1 cup of brandy, rum, or whiskey at the end. Heat and seal in jars or freeze.
