ORANGE TURKEY ROAST 
1 boneless turkey roast, about 5 lb.
2 cloves garlic, crushed
1 c. orange juice
2 tbsp. marjoram
1 tbsp. thyme
2 tsp. ground pepper
2/3 c. safflower oil
2 c. water

Place roast in Dutch oven. In a medium bowl, whisk together the garlic, orange juice, marjoram, thyme, and ground pepper. Cover the roast with the mixture. Then place oil on top of roast. Put water at bottom of Dutch oven. Preheat oven to 375 degrees. Cook for 2 1/2 hours; check for doneness.
