CARROT CAKE 
3 c. grated carrots
3 c. cake flour
3 c. sugar
2 tsp. cinnamon
1 1/2 c. vegetable oil
4 eggs
2 tsp. baking soda
1 tsp. salt

Cream sugar, oil, and eggs. Sift flour and add other ingredients except carrots. Mix, then stir in carrots. Bake at 350 degrees for 25-30 minutes. Make in 3 layers or use a 9 x 13 pan.

FROSTING:

8 oz. cream cheese
1 stick butter
1 box confectioners sugar
2 tsp. vanilla

Mix ingredients together. Add milk if needed. Spread on cooled cake, then sprinkle with 1 cup chopped nuts.
