QUICHE LAVEIENE 
1 (9 inch) pie shell
1/4 lb. bacon (8 slices), can also use leftover ham diced and or 1/2 ham.
1/2 c. finely chopped onions, sauteed in 1 tbsp. oil (do not brown).
1/4 lb. Swiss cheese
1/4 lb. Mozzarella cheese, optional
1/2 tsp. salt
3 eggs, beaten
1 3/4 c. milk
1 tbsp. flour

Bake pie shell at 350 degrees for 5 or 7 minutes or until light brown. Remove from oven and sprinkle diced bacon ham cheese and onions in the pie shell. Combine eggs, milk, flour and salt, mix until blended.

Pour the mixture over other ingredients in pie shell. Bake in preheated oven at 325 degrees until firm, usually 35 to 40 minutes.

You may reserve 2 tablespoons diced bacon and sprinkle on top before baking.
