CAJUN CHICKEN STRIPS 
1 1/2 lbs. boneless chicken breasts
1/4 c. all-purpose flour
1/2 tsp. salt
1/2 tsp. paprika
1/4 tsp. black pepper
1/4 tsp. thyme
1/4 tsp. onion powder
1/4 tsp. garlic powder
1/8 tsp. cayenne pepper
1/8 tsp. white pepper
1/8 tsp. sage
1/2 c. vegetable oil

Cut chicken breasts into strips, about 2 1/2 x 3/4 inch. Combine flour, salt, paprika, black pepper, thyme, onion powder, garlic powder, cayenne pepper, white pepper, and sage in a plastic bag. Add chicken strips. Shake well until coated evenly.

Heat oil in a large pan. Saute chicken over medium high heat, about 3 minutes or until crisp. Do not over fry. Do not over crowd pan. Makes 4 servings. May also use turkey breast.
