BUTTERSCOTCH PUDDING 
3 tbsp. butter
1/2 c. sugar
1 egg
1 c. milk
2 c. flour
3 tsp. baking powder
Salt

Mix together: 1 c. brown sugar

Cream butter and sugar. Add egg. Stir. Alternate flour, baking powder and salt with milk. Pour into 9x13 cake dish. Cover with sour cream and brown sugar. Bake 350 degrees until it tests done with toothpick, 30 minutes. Cake will come to top, pudding on the bottom.
