DANISH COFFEE CAKE 
2 c. Bisquick
3/4 c. milk
2 tbsp. soft shortening
1/4 c. sugar
1 egg
2/3 c. preserves

Mix Bisquick, milk, shortening, sugar and egg. Beat 1/2 minute. Spread in greased baking dish. Spoon preserves over batter and swirl with fork. Sprinkle topping over batter. Bake at 400 degrees for 25 minutes. Frost while warm.

Topping: Mix 1/4 cup brown sugar, 1/2 cup raisins and 1/4 teaspoon cinnamon.

Frosting: Blend 1 cup 4X sugar, 1/2 teaspoon vanilla and 1 1/2 tablespoons cream.
