AVOCADO SOUP 
2 c. ripe avocados, peeled, pitted
2 c. chicken broth
1 tsp. onion, finely grated
Dash of hot pepper sauce
Salt and pepper
1/4 c. whipping cream, whipped to peaks
1 tbsp. finely chopped chives

Place avocado in bowl of food processor or blender. Process until smooth. In large saucepan, bring broth to a boil. Remove from heat. Whisk avocado puree and onion into broth. Add hot sauce, salt and pepper. Chill before serving. Add 1 tablespoon whipped cream to each serving. Sprinkle with chives.
