LEMON ICE 
2 c. sugar
1 c. fresh lemon juice
Grated lemon peel
1 c. ice
2 c. water

Bring sugar and 1 cup water to a boil. Pour lemon juice into slightly cooled mixture. Add lemon rind, ice and remaining water. Place in freezer until mixture becomes like applesauce. Mix with hand blender, refreeze, beat again. Serve in sherbet glasses. Serves 6.
