FRESH BERRY SYRUP 
1 cup fresh berries of choice
1/2 cup unsweetened apple juice
1 tbsp cornstarch or arrowroot
3 tbsp sugar
1/2 tsp grated lemon rind
1 tbsp lemon juice

In a blender or food processor puree the berries with apple juice. Pour into a saucepan and add cornstarch. Cook over medium heat until mixture thickens, about 3 minutes. Add sugar, lemon rind and lemon juice. Pour over pancakes, waffles or french toast.
