POPPY SEED COFFEE CAKE | |
1/4 c. poppy seeds soaked in 1 c. buttermilk or sour milk 2 tbsp. sugar 2 tsp. cinnamon 4 eggs, separated 1 c. butter 1 1/2 c. sugar 1 tsp. almond or rum (I like almond) 1 tsp. vanilla Mix together 2 tablespoons sugar and 2 teaspoons cinnamon; set aside. Beat 4 egg whites stiff. Cream butter and 1 1/2 cups sugar; beat egg yolks, almond or rum and vanilla. 2 c. flour 1 tsp. baking soda 1/2 tsp. salt Sift together. Add dry ingredients alternately to cream mixture with liquid. Fold in beaten egg whites last. Grease Bundt pan. Pour 1/2 batter and cinnamon mixture and rest of batter and cinnamon mixture to top. Bake at 350 degrees for 40 minutes. |
