CHICKEN PARMESAN 
5 whole chicken breasts (split and boned)
2 eggs, beaten
1 tsp. salt
1/2 tsp. pepper
Italian bread crumbs
2 c. tomato sauce
Pinch of basil
1/4 tsp. garlic powder
1 tbsp. butter
1/2 c. Parmesan cheese
1 pkg. Mozzarella cheese

Combine eggs, salt and pepper. Dip chicken in mixture and then in bread crumbs.

Heat vegetable oil until very hot. Brown chicken on both sides - remove - drain and place in shallow baking dish. Pour excess oil from frying pan.

Bring to a boil and then simmer tomato sauce, basil and garlic. Stir in butter. Pour over chicken and sprinkle with Parmesan cheese. Cover and bake 30 minutes at 350 degrees. Then cover chicken with Mozzarella cheese and bake until cheese melts.
