1 lb. fish
3 hard cooked eggs, chopped
3 tbsp. butter
2 tbsp. flour
1 tsp. salt
Dash black pepper
1 tsp. paprika
2 tsp. prepared mustard
2 c. milk
1/2 c. American cheese, grated

Place fish in shallow baking dish. Add eggs. Melt butter, stir in flour and seasonings, and then add milk. Cook sauce over low heat, stirring until thickened. Add cheese. Pour over fish and eggs. Bake at 375 degrees for 30 minutes.
