FAMILY ONE DISH MEAL 
1 3/4 c. uncooked white rice
2 lb. lean or extra lean ground beef
2 med. bell peppers
2 med. onions
2 3/4 lb. cheddar cheese
Corn oil, approximately 1 tablespoon
Salt

Cook rice until tender. Saute peppers and onions in oil. Brown ground beef (salt to taste). Mix above ingredients with remainder of cheese. Put in 1 large or 2 smaller baking dishes. Top with remaining cheese and bake at 350 degrees until cheese is lightly brown around the edges. Serve with salad of your choice.
