KID'S EASY CREAM CHEESE CUPS 
2 eggs
2 (8 oz.) pkgs. cream cheese, softened
3/4 c. sugar
1 tsp. vanilla extract
Vanilla wafer cookies

In bowl, mix well eggs, cream cheese, sugar and vanilla with electric beater. Arrange paper baking cups in muffin pan(s) and place a vanilla wafer cookie in each cup. Pour mixture over cookies to fill cups 3/4 full. Bake in preheated oven at 350 degrees for 15 minutes or longer (test with toothpick - should come out clean). Allow cupcakes to cool before removing from pan and then refrigerate. Makes 12-16.

Optional: Before refrigerating, top cheese cups with a teaspoon of a favorite pie filling (cherry, blueberry, etc.) or canned crushed sweetened pineapple (drained).
