CARIBBEAN CASSEROLE 
1 med. onion, chopped
1 tbsp. oil
1 (14 1/2 oz.) can stewed tomatoes
1 (16 oz.) can black beans
1 tsp. oregano leaves
1 tsp. turmeric
1/2 tsp. garlic powder
1 1/2 c. instant brown rice

Stir onion in hot oil until tender (do not brown). Add tomatoes, beans (include liquid from both), oregano, turmeric, and garlic powder. Bring to a boil. Stir in rice and cover. Reduce heat to simmer for 5 minutes. Remove from heat and let stand for 5 minutes.
