MEXICAN CHICKEN CASSEROLE 
2 cans cream of mushroom soup
1 can cream of chicken soup
1 can Rotel
1 c. chicken broth
4 lg. chicken breasts
1 med. onion, chopped
1 med. pkg. Doritos
1 c. cheese, grated

Boil chicken breasts; reserve 1 cup broth. Debone and cut into bite-size pieces. Mix soups, Rotel, chicken broth and onion; can marinate overnight to blend flavors. In a large casserole dish, layer Doritos, soup, chicken, soup and Doritos. Top with cheese. Bake at 350 degrees for 30 minutes.
