BEET SALAD 
1 lg. (6 oz.) size lemon Jell-O
1 can (2 c.) shoestring beets with beat juice
1 jar red horseradish
4 tsp. lemon juice
2 c. hot water

Dissolve Jell-O in hot water. Add beets, horseradish and lemon juice. Pour into mold and let set until firm.
