CHOWDER - VEGETABLE - LENTIL 
1 1/2 c. lentils, washed
1 qt. water
2 1/2 tsp. salt
3/4 c. onion, chopped
2/3 c. green pepper, chopped
1/3 c. butter
1/2 c. pimento, chopped
1 qt. stewed tomatoes

Combine lentils, water and salt in large saucepan. Cook covered over medium heat for 40 minutes. Saute onion and green pepper in butter until tender. Combine all ingredients; simmer covered 40 to 50 minutes. Yield: 6 large servings.
