FIESTA CHICKEN KIEV 
4 chicken breasts, split, skinned, boned
2 tbsp. butter
3 tbsp. sharp cheese
2 tsp. instant minced onion
1/2 tsp. salt
1 tbsp. chopped green chiles (seeds removed)
1/4 c. butter, melted
1 c. crushed cheddar cheese crackers
1 1/2 tbsp. taco seasoning mix

Pound raw chicken pieces to flatten. Beat together butter and cheese. Mix in onion, salt and chiles. Put portion in center of chicken piece. Roll up ends and fasten with a toothpick. Dip in melted butter, then coat with crushed crackers and taco seasoning. Cover with waxed paper. Cook on high in microwave oven 10-12 minutes. Let stand 5 minutes. Serves 6-8.

Since microwave ovens vary in power, you may need to adjust your cooking time.
