NANAIMO BARS 
FIRST LAYER:

1/2 c. butter
1/4 c. sugar
3 tbsp. cocoa
1 beaten egg
1 tsp. vanilla
2 c. graham cracker crumbs
1 c. flaked coconut
1/2 c. chopped walnuts

In medium pan combine butter, sugar and cocoa. Stir over medium heat until sugar dissolves. Remove from heat and whisk in egg and vanilla. Add the crumbs, coconut and nuts. Spread into a 9-inch square pan. Chill until set, about 30 minutes.

SECOND LAYER:

1/4 c. butter
2 c. 10-X sugar
2 tbsp. instant vanilla pudding mix
2 tbsp. hot water

Meanwhile, cream all ingredients together until well blended. Spread this mixture over the first layer. Chill another 30 minutes.

FROSTING:

2 sq. semi-sweet chocolate
1 tsp. butter

Place chocolate in bowl set over hot water and stir until melted. Blend in butter; spread over the top of layers. Chill until set.

Makes 16-20 bars. Increase in separate batches if more are needed.

NOTE: These Nanaimo Bars are unbaked and easy. They are named after Nanaimo, a city on Vancouver Island, British Columbia.
