MEXICAN QUICHE 
8 eggs
1/2 c. flour
3/4 tbsp. salt
1 tsp. baking powder
3 c. shredded Jack cheese
1 1/2 c. cottage cheese
2 cans green chilies, diced
1/4 c. melted butter

Beat eggs, flour, salt and baking powder until light and fluffy (about 5 minutes). Add cheeses, chilies and melted butter. Pour into a well buttered 9x13 pan. Bake at 350 degrees for about 40 minutes or until puffed and golden brown. Let stand 10 minutes before cutting into squares.
