SCRAMBLED EGG CASSEROLE 
2 tbsp. butter
2 1/2 tbsp. flour
2 c. milk
1/2 tsp. salt
4 oz. shredded American cheese
2 c. diced ham
1/4 c. chopped onion
3 tbsp. butter
13-14 beaten eggs
1 (4 oz.) can mushrooms
1/2 c. butter
2 1/4 c. soft bread pieces

1. Make simple cream sauce by melting butter. Gradually add milk and stir until thick and smooth. Then add cheese. Set aside.

2. Saute ham and onions in butter until tender. Then add beaten eggs. Stir constantly over medium heat until large curds are formed.

3. Stir in mushrooms and cheese sauce. Spoon into 9x13 table top baking pan.

4. Melt 1/2 cup butter in fry pan. Add bread pieces. Put on top of egg mixture.

5. Cover and chill 24 hours. Bake uncovered 350 degrees for 30 minutes. Good for brunch, buffet.
