OLD-FASHIONED STACK CAKE | |
2 c. chunky applesauce 1 c. firmly packed brown sugar 1/2 c. sugar 2 tsp. ground cinnamon 1/2 tsp. ground cloves 1/2 tsp. ground allspice 4 c. all purpose flour 1 c. sugar 1 tbsp. + 1 tsp. baking powder 1 tsp. salt 1/2 tsp. baking soda 2 eggs, beaten 1 c. buttermilk 1/2 c. butter, softened 2 tsp. vanilla extract Combine first 6 ingredients in a small saucepan; heat thoroughly. Cool. Combine next 5 ingredients in a large bowl. Combine eggs and buttermilk; add to dry ingredients. Mix well. Stir in butter and vanilla (dough will be sticky). Divide dough into 6 equal portions and roll each in flour. Pat dough with floured hands into bottom of 6 greased 9" pie pans or 9" round cake pans. (Do not mix pan types.) Bake at 450 degrees for 7 minutes or until lightly browned. Immediately remove layers from pans, spread each with about 1/2 cup apple filling. Stack layers. Yield: 1 (9") cake. Substitute dried apples for chunky applesauce. Cook until soft, mash and add sugar to taste. Put apples on top of cake when finished with layers. Better to let sit overnight before serving. |
