OLD-FASHIONED STACK CAKE 
2 c. chunky applesauce
1 c. firmly packed brown sugar
1/2 c. sugar
2 tsp. ground cinnamon
1/2 tsp. ground cloves
1/2 tsp. ground allspice
4 c. all-purpose flour
1 c. sugar
1 tbsp. plus 1 tsp. baking powder
1 tsp. salt
1/2 tsp. baking soda
2 eggs, beaten
1 c. buttermilk
1/2 c. butter, softened
2 tsp. vanilla extract

Combine first 6 ingredients in a small saucepan; heat thoroughly. Cool.

Combine next 5 ingredients in a large bowl. Combine eggs and buttermilk; add to dry ingredients. Mix well. Stir in butter and vanilla (dough will be sticky).

Divide dough into 6 equal portions and roll each in flour. Pat dough with floured hands into bottom of 6 greased 9-inch pie pans or 9-inch round cake pans. (Do not mix pan types.) Bake at 450 degrees for 7 minutes or until lightly browned.

Immediately remove layers from pans, spread each with about 1/2 cup apple filling. Stack layers, leaving the top layer without filling. Yield: one 9 inch cake.
