ZUCCHINI CASSEROLE 
5-6 med. size summer zucchini, diced and peeled
1 c. stewed tomatoes (15 oz.)
1 c. Italian style tomatoes (15 oz.)
1 (8 oz.) can tomato sauce
1 sm. onion, chopped
Salt, pepper, garlic powder, Italian seasoning, or oregano
Bay leave, crushed, to taste
2-3 slices toast, diced
1/2 stick butter

Mix all ingredients together in casserole dish except toast and butter. Sprinkle diced toast on top. Dot with butter. Cover. Place in 400 degree oven. Cook 45 minutes or until zucchini tender. Serve with or without meat.

VARIATION: Add cooked ground beef, meatballs or sliced cooked sausage to casserole before cooking.
