KATHI'S CARROT PINEAPPLE CAKE | |
1 1/2 c. flour 1 tsp. baking powder 1 tsp. cinnamon 1 c. sugar 1 tsp. baking soda 1/2 tsp. salt 2/3 c. oil 1 c. shredded carrots 1 tsp. vanilla 2 eggs 1/2 c. crushed pineapple with juice Sift together first six ingredients and add oil, carrots, vanilla, eggs and pineapple. Stir until moist. Beat 2 minutes at medium speed with mixer, batter will be heavy. Grease and flour a 9 x 9 x 2 pan. Bake in 350 degree oven for 40 to 45 minutes. |
