1 box lemon cake mix (prepared according to box) Zest of 1 lemon and 1 orange Add zest of 1 lemon and 1 orange to prepared cake mix. Bake in miniature cupcake pans - approximately 8-12 minutes (ovens vary). ICING: 2 c. powdered sugar Zest and juice of 2 lemons and 2 oranges Enough water to make this mixture runny Icing consists of mixing powdered sugar, juice and zest of lemons and oranges and just enough water to make mixture runny. Dip tops of cupcakes in icing and place on serving dish. Makes approximately 48 tiny cakes. |
