3 tbsp. butter 1/4 c. sugar 1 egg 2 egg yolks 1 tbsp. light cream 3 tbsp. grape or any sweet fruit juice Grated rind of 1 lemon 2 1/2 c. sifted flour all-purpose Fat for deep frying (Crisco is good) Powdered sugar to sprinkle on top of cookies Cream butter and sugar. Beat in eggs and egg yolks one at a time, beating well after each addition. Beat in cream, grape juice and lemon rind. Gradually stir in flour. Wrap dough in wax paper and chill for 30 minutes. Divide dough into 4 parts. Roll out each part as thin as possible (thin as a dime) the thinner the better, cut into 1 1/2 inch squares. Drop into deep hot fat (375 degrees on frying thermometer) and fry until golden brown. Drain on absorbent paper or paper towels. Sprinkle with confectioners' sugar, while hot. Serve hot or cold. Makes about 7 dozen. P.S. The men love these. |
