ITALIAN FISH 
2 lb. flat fish (flounder, yellow tail, sandabs, etc.)
2 eggs
2 c. Italian bread crumbs
Cooking oil

Rinse fish in cold water. Scramble eggs in a medium bowl. Dip fish fillets into eggs. Then roll in Italian bread crumbs. Heat oil in heavy saucepan. Fry fish until browned and flakes well.
