CHARLOTTE'S MEATLOAF 
3 lb. ground chuck
1/2 c. chopped onion
1/2 c. chopped celery
1 lb. ground pork sausage (mild)
4 slices bread
3 eggs
Milk
Salt and pepper

Together in a mixing bowl beat eggs, onion, celery, bread, and milk. (Tear up bread and add to mixture.) Put enough milk to cover bread, onion, celery and egg mixture. Beat until bread is not in chunks (it's best to let soak while mixing meat, then beat well). Beat in salt and pepper.

Mix or knead meat by hand until thoroughly blended. I take a large 9 1/2 x 13 1/2 baking dish and line with foil. Put meat in pan and pour milk and bread mixture over it. Knead thoroughly together and form a large, wide loaf.

Pull foil over to thoroughly cover the meat. Bake at 375 degrees for at least 1 hour. Then pull foil away. If not done, continue cooking. If done, put under broiler for a few seconds until top browns a little or looks done. It's really a lot easier than I've made it sound!
