LEE'S PERSIMMON COOKIES 
1 tsp. baking soda
1 c. persimmon pulp
1 c. sugar
1/2 c. butter, butter or shortening
1 egg
2 c. flour
1/2 tsp. salt
1/2 tsp. cinnamon
1/2 tsp. cloves
1/2 tsp. nutmeg
1 tsp. baking powder
1 c. chopped dates or raisins
1 c. chopped nuts

Mix soda with persimmon pulp and set aside. Cream shortening and sugar; beat in egg and add persimmon pulp.

Sift together the flour, salt, cinnamon, cloves, nutmeg and baking powder. Add dry ingredients to persimmon mixture; beat with wooden spoon until well mixed. Fold in dates (or raisins) and nuts; stir well.

Drop by the teaspoonful onto greased cookie sheets. Bake at 350 degrees for 10 to 15 minutes. Do not overbake. Yield: approximately 4 dozen cookies.
