BEEF ENCHILADAS | |
1 med. onion, minced 2 tbsp. vegetable oil 2 tbsp. flour 2 c. chicken broth 1/4 tsp. garlic powder 1 (4 oz.) can chopped chilies 2 c. canned tomatoes FILLING: 1 lb. ground beef 1/2 onion, chopped 1 tsp. chili powder 1 tsp. vinegar 1/2 tsp. salt 12 corn tortillas 2 c. grated cheese SAUCE: Saute onion in oil. Sift in flour and cook 1 minute. Add broth and garlic powder, then cook until thick. Add other ingredients and cook 10 minutes. Then puree in food processor. Brown meat and add onions, vinegar, chili powder and salt. Dip each tortilla in sauce to soften. Place large spoonful of meat and a little cheese and a spoonful of sauce in each tortilla. Roll up and place in baking dish seam side down and bake uncovered with cheese on top and remaining sauce for 15 or 20 minutes at 350 degrees. |
