GROUND BEEF, BEEF OR CHICKEN FILLING | |
2 lbs. ground beef, beef or chicken 2 tbsp. oil 1 lg. onion, chopped 1/2 - 1 c. red chili sauce or taco sauce or more to taste 1 can ripe pitted olives, chopped (opt.) Cook meat until tender and can be torn with a fork. Add rest of ingredients, mix well (meat should be mashed). To prepare tamale: All tamales have 3 main parts, a filling, a coating of Masa dough around that and a wrapper of corn husks to hold it together while cooking. 1. Spread 2 tablespoons masa dough on a corn husk. Spread in square shape in center of husk until smooth. 2. Add several spoonfuls of filling in the center, then fold the husk around the food to make a little packet. Stack the packets in a steamer and cook until the masa dough is cooked firm, usually takes 45 minutes to 1 hour. To serve, unwrap and spoon on taco sauce. Tamales can be prepared ahead and frozen. |
