IT'S BETTER THAN POTATO SALAD 
1 c. rice
2 c. mayonnaise
2 c. celery
1 medium onion, chopped
4 tbsp. prepared mustard
1/2 tsp. salt
4 hard-boiled eggs
1 cucumber, peeled and diced
1 carrot, sliced

Cook rice according to package directions; chill. Add mayonnaise, celery, onion, mustard and salt. Mix well and chill. Stir in eggs, carrots and cucumber before serving. (Can use 2 cups Minute Rice.)
