HOLISHKAS 
2 lbs. lean, raw beef, chopped
Salt and pepper to taste
1 c. cooked rice
2 cans tomato sauce
2 cans tomato paste
1 onion, chopped
1/2 c. vinegar
2 c. water
1/3 c. sugar
1 c. raisins
16-18 ginger snaps
Lg. cabbage leaves

Soak the cabbage leaves in hot water a few minutes to make them less brittle. Season the meat lightly with salt and pepper. Add rice. Roll a portion of the meat mixture in each leaf. Place them in a large, low pan with the rest of the ingredients and let them simmer until the cabbage is tender and well browned. Serves 6 to 8.
