BEER CHEESE SOUP 
1/4 c. butter, melted
1/2 c. flour
1 1/2 qt. chicken stock
1/2 c. chopped onion
1/2 c. chopped celery
1/2 c. chopped carrots
1/2 lb. Cheddar cheese, shredded
1 1/2 c. milk
1 c. diced ham
1 c. diced cooked potatoes
1/2 tsp. salt
Dash white pepper

Add flour to butter and brown, slowly adding stock, stirring until thickens. Add vegetables simmer 20 minutes. Stir in cheese until melted. Add milk, reduce heat. Add ham. Add beer and parsley. Cook on low heat 5 minutes. Season to taste with salt and pepper. Serve with popcorn on top.
