SWEET POTATO CASSEROLE 
30 oz. can sweet potatoes
1/4 c. brown sugar
1/4 c. melted butter
2 tbsp. heavy cream
1 egg
1/2 tsp. salt
1/2 tsp. vanilla
1/4 tsp. cinnamon
1/4 c. chopped pecans
8 oz. can apricot halves
Pecan halves
Miniature marshmallows

Drain can of sweet potatoes, place in mixer bowl and beat until smooth. Blend in brown sugar, melted butter, cream, egg, salt, vanilla, cinnamon and chopped pecans. Place 1/2 of mixture in buttered casserole. Drain can of apricot halves.

Arrange apricot halves on top of potatoes in single layer (cover potatoes completely). Top with remaining potatoes. Garnish with pecan halves. Cover with miniature marshmallows. Bake at 350 degrees for 30 minutes or heated through.
