ZUCCHINI BECHAMEL 
Zucchini
Onion (opt.)
Bechamel - white sauce
Grated Swiss cheese

Peel and slice zucchini. Boil in salted water for 5 to 10 minutes; drain. Make white sauce. Stir in zucchini (and onion). Put in casserole. Put grated cheese on top. Bake at 400 degrees for 30 minutes.
