MELT IN YOUR MOUTH FRIED SHRIMP 
1 lb. fresh shrimp (26-30 count)
1 sm. can Carnation evaporated milk
2 eggs
1 c. plain flour
1 tbsp. baking powder
2 tbsp. vinegar
Tony's Creole Seasoning to taste

Remove heads and shells from shrimp, leaving tails. Butterfly and devein shrimp. Make a mixture of eggs, milk, baking powder and vinegar. Marinate shrimp for 2-3 hours in this mixture. When ready to cook, remove from marinate and lightly season with Tony's Creole Seasoning. Flour shrimp well and fry in oil at 380 degrees until golden (do not cook over 10 minutes). 3-4 servings.
