ZUCCHINI BREAD 
1 c. oil (such as Crisco or Wesson, etc.)
2 c. shredded or grated, peeled zucchini
3 eggs
2 tsp. vanilla
3 c. flour, sifted
1 c. sugar
1 c. brown sugar
1 1/4 tsp. baking soda
1 1/4 tsp. cinnamon
1 tsp. baking powder
1 c. finely chopped nuts

Preheat oven to 350 degrees.

In blender (must) blend oil, zucchini, eggs and vanilla all together well. Pour blended mixture in bowl and add remaining ingredients. Mix everything together at high speed of electric mixer or until well mixed. Makes 2 small loaves of bread. Grease and flour loaf pans. Bake at 350 degrees for approximately 1 hour.
