1 1/2 c. water
2 1/4 c. mashed potato flakes
1/2 c. sour cream, more if desired
1/2 c. milk
1/2 tsp. salt
2 tbsp. butter
1 tsp. onion salt
1 egg
Shredded cheese

In 1 1/2 or 2 qt. casserole combine water, salt and butter. Cook covered in microwave 2 minutes 20 seconds. Add milk, stir in potato flakes with fork. Stir in sour cream, onion salt and egg. Sprinkle with cheese. Cook covered 4 minutes.
