BLUEBERRY BUTTERMILK PANCAKES 
1 1/2 c. flour
1 1/2 tbsp. sugar
1 1/2 tsp. baking powder
3/4 tsp. baking soda
3/4 tsp. salt
1 large egg, beaten lightly
1 1/2 c. buttermilk
1 1/2 tsp. vanilla
2 1/2 tbsp. vegetable oil (plus extra for the griddle)
1 c. fresh blueberries

In a large bowl, whisk together flour, sugar, baking powder, baking soda and salt. Whisk in egg, buttermilk, vanilla and 2 1/2 tablespoons oil, whisking until smooth. Fold in blueberries gently.

Heat a griddle over moderately high heat until hot enough to make drops of water scatter over its surface and brush with extra oil. Drop batter onto griddle and cook on each side until golden.
